Ingredients:

- 4 cups grated carrots

- 2 cups milk

- 1/2 cup sugar (adjust according to taste)

- 4 tablespoons ghee (clarified butter)

- 1/4 cup chopped nuts (cashews, almonds, pistachios)

- 1/4 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- 1 tablespoon raisins (optional)


Instructions:

1. Heat ghee in a heavy-bottomed pan or kadai on medium heat.

2. Add the grated carrots to the pan and sauté for a few minutes until they soften and release their moisture.

3. Pour in the milk and bring the mixture to a boil.

4. Reduce the heat to low and let the carrots cook in the milk, stirring occasionally to prevent sticking, until the milk is absorbed. This may take about 30-40 minutes.

5. Once the milk is absorbed, add sugar to the pan and mix well.

6. Continue to cook the mixture on low heat, stirring frequently, until the carrots are cooked and the halwa thickens.

7. Add cardamom powder, chopped nuts, saffron strands (if using), and raisins (if using). Mix well.

8. Cook for another 5-10 minutes until the halwa reaches a desired consistency.

9. Remove from heat and serve hot or warm.

10. Garnish with more chopped nuts if desired.

Note: You can adjust the amount of sugar and nuts according to your taste preferences. Some people also like to add a tablespoon of khoya (milk solids) for a richer taste.
